Tomato & Chilli Pesto Pasta

So you guys loved it when I showed you the avocado recipe so I thought I’d show you another one…. But if you click the photo below it will link to a video on my YouTube page of me making the pasta.

So lets get started.

200g Pasta ( I used wholemeal)
2 Peppers
Handful of Spinach Leaves
1/4 Red Onion
10 Baby Plum Tomatos
3 Teaspoons of Tomato & Chilli Pesto

How To Make

First I boiled a pan of water and added the pasta to, so it can cook whilst I’m preparing the vegetables.

Then I chop the peppers, onion, spinach leaves and tomatoes into small chunks and place them into a separate bowl.

Once the pasta was fully cooked, I then drained the water from the pasta using a colander. I then rinsed the pasta in cold water.

As the pasta was cooling in the colander, I then added the chopped up vegetables into the pan  (I used the same pan which I cooked the pasta in).

I added 3 tablespoons of the pesto into the vegetables and stirred the pesto into the vegetables.

I then slowly added pasta into the pan, I added the pasta handful by handful. I slowly stirred the pasta into the pan and made sure all the sauce was on the pasta.

Finally I plated up and added some fresh spinach leaves on to the top of the pasta.
